Recently taking the internet by storm, ‘fakeaways’ are home-cooked versions of take-away favourites and are a great way to pass the time while staying safe and staying home. Not only do fakeaways make a tasty treat, they’re healthier than the real thing too!
Chicken Chow Mein (Serves 2)
For the sauce:
- thumb-size piece fresh ginger
- 2 garlic cloves
- 3 tbsp tomato ketchup
- 2 tbsp oyster sauce
- 2 tbsp soy sauce
For the noodles:
- 5 spring onions
- 1 onion
- 2 carrots
- Large handful of green cabbage, cut into thick slices
- 200g beansprouts
- 1 large or 2 small chicken breasts
- 3 nests medium egg noodles
- 1 tbsp vegetable oil
- Remove skin from the ginger and grate. Put in a bowl with the chopped garlic and add the ketchup, oyster sauce, soy sauce and 3 tbsp water. Stir together to make the sauce.
- Cut the chicken into bite size pieces and mix with the sauce.
- Dice the onion, spring onion and cut the carrots into strips.
- Boil a large pan of water on the hob and drop in the noodles, cooking for 3-4 minutes, or according to packet instructions. Once cooked until al dente, drain the noodles.
- Heat a wok until smoking and add the oil and chicken. Stir fry for 4-5 minutes or until the chicken is cooked through.
- Add the vegetables and stir-fry for a further 2 minutes.
- Add the cooked noodles and stir in with the vegetables.
- Pour any remaining sauce into the wok and stir well until bubbling.
