Rushed off your feet, here’s a quick 10 minute vegan breakfast for lock down.
Easy 10 minute vegan breakfast pancakes and frothy pick me up coffee:
Ingredients:
- Rolled Oats (roughly 5 tablespoons)
- Vanilla Extract (1 teaspoon)
- 1 banana
- Almond milk or another milk substitute of your choice (roughly 5 tablespoons)
- Coconut oil (1 to 2 teaspoons)
- Toppings of your choice
Method:
- Add rolled oats, vanilla extract and almond milk into a mixing bowl or jug.
- Cut up the banana and, using a fork, mash in with the other ingredients.
- Stir or whisk the ingredients until the oats begin to adopt a flour-like texture.
- Heat up the coconut oil in a pan and scrape the pancake mixture into the pan.
- When the mixture begins to bubble, use a spatula to flip the pancake over.
- When each side of the pancake is browned, serve on a plate and add toppings such as vegan chocolate flakes, berries, seeds or honey.
Viral ‘frothy’ coffee recipe: (Dalgona Coffee recently popularised on Instagram and TikTok)
Ingredients:
- Instant Coffee (roughly 2 teaspoons)
- Hot water (roughly 2 or 3 teaspoons)
- Sugar (roughly 2 teaspoons)
- Milk or milk substitute (sweetened almond milk for a sweeter taste, about half a glass full)
- Ice
Method:
- Add equal parts instant coffee, hot water and sugar in to a mixing jug (use a jug rather than a bowl to prevent mess).
- Whisk the ingredients with a handheld whisk or, alternatively, an electric whisk to speed up the process.
- Continue to whisk the ingredients until a frothy texture is formed.
- Fill up a glass or mug halfway with milk and add a few cubes of ice to the same mug.
- Scrape the frothy mixture of coffee, water and sugar on top of the milk in the mug.
