FAKEAWAY RECIPES
Recently taking the internet by storm, ‘fakeaways’ are home-cooked versions of take-away favourites and are a great way to pass the time while staying safe and staying home. Not only do fakeaways make a tasty treat, they’re healthier than the real thing too!
Vegan Spring Rolls (makes 8)
- 1 tbsp olive oil
- 4 garlic cloves
- 1 onion
- 2 carrots
- 4 leaves of cabbage
- 30g bean sprouts
- 2 tbsp soy sauce
- 8 sheets spring roll pastry
- Heat the olive oil in a wok, then add the sliced garlic, julienned onion, carrots and cabbage, and bean sprouts.
- Stir fry for a couple of minutes, then add the tamari sauce. Cook for a further 5 minutes over medium-high heat.
- To assemble the rolls: lay out the spring roll sheets so they are in a diamond shape, and place about 2tbsp of the filling on each sheet, near the bottom corner. Tightly roll the sheet over once, fold over left side, then fold over right side. Brush a little water along the top edge before fully rolling up to the top corner.
- Heat plenty of oil in the wok and when it’s very hot, add the spring rolls and fry them for about 1 minute or until both sides are golden brown.
- Serve with soy sauce for dipping.
