FAKEAWAY RECIPES
Recently taking the internet by storm, ‘fakeaway recipes’ are home-cooked versions of take-away favourites and are a great way to pass the time while staying safe and staying home. Not only do fakeaways make a tasty treat, they’re healthier than the real thing too!
Easy Butter Chicken (serves 4)
For the chicken marinade:
- Juice of 1 lemon
- 2 tsp ground cumin
- 2 tsp paprika
- 1 ½ tsp hot chilli powder
- 200g natural yogurt
- 500g boneless, skinless chicken thighs, cut into bite sized pieces
For the curry sauce:
- 2 tbsp unsalted butter
- 1 onion, chopped
- 3 garlic cloves, crushed
- 1 green chilli, deseeded and finely chopped (optional)
- thumb-sized piece ginger, grated
- 1 tsp garam masala
- 2 tsp ground fenugreek
- 3 tbsp tomato purée
- 300ml chicken stock
- Mix all the marinade ingredients in a large bowl. Add the chicken pieces and toss in the marinade, massaging it in with your hands. Cover and chill in the fridge for 1 hour or overnight.
- In a large saucepan, heat the butter. Once melted, add the onion, garlic, green chilli and ginger. Fry on a medium heat for 10 mins or until soft.
- Add the spices with the tomato purée, cook for a further 2 mins until fragrant, then add the stock and marinated chicken.
- Cook for 15 mins, then add any remaining marinade left in the bowl.
- Simmer for 5 mins, or until the sauce has thickened.
- Serve with rice and naan bread.
